In 1970, in the city of Dedovsk, Istra district, Moscow region, the construction of a new bakery began with a daily output of up to 65 tons of bakery products. The first loaf was baked on March 20, this date is considered the birthday of the enterprise. The production was small: only 150 people worked on six production lines. The modest assortment did not even reach 20 items.

In 1980, the management of the enterprisepassed to Valentina Gorbunova, under whose leadership the Dedovsky Khleb plant was transformed. With her, the quality of products improved: for wheat loaves, black "Borodinsky", waffles and fragrant buns, people specially came from the regional center and even from Moscow. This period includes the creation of a transport department, waffle and confectionery production. A small trading network was launched not only in Dedovsk, but also in neighboring settlements.

Continuity of generations

And today's director Igor Glukhovtsev preserves carefully accumulated traditions. Grandfather's bread still has the same crispy crust and tender flesh. The enterprise is well-groomed, the facade of the buildings and the internal “decoration” of the workshops have been repaired. Technological production is constantly being improved, equipment is being updated. One of the major modernization projects was the construction of a silo for bulk storage of flour in cooperation with Agro-3.

Today, more than 400 workers work at the bakery factory. Although seasonal productivity has decreased compared to the old days to 30-40 tons of bread, the range of products has grown incomparably and exceeded 180 items. Moreover, each of the products is still baked with love. Grandfather's waffles, cakes and Easter cakes are especially famous.

Products

Work in market conditions has shown that mass varieties of bakery products are in less demand than before. First placecomes a variety of assortment. It is not enough to produce 2-3 types of loaves and the same amount of black bread. Realizing this, the Dedovsky Bakery is constantly searching for new recipes and improving the old ones. At the same time, the quality complies with GOSTs and accepted technical conditions.

  • cakes, Easter cakes, rolls, cupcakes;
  • cookies, bagels, marmalade, gingerbread, waffles;
  • dough, breadcrumbs, flour;

By the way, Easter cakes on "Grandfather's bread" are made in a more time-consuming sponge method. Although the production time has increased from 1-2 hours to 4-5 hours, the quality is incomparably high: the dough comes out very fluffy, the pulp becomes stale more slowly, and the taste lasts much longer. The sponge method allows you to abandon the "fashionable" additives, accelerators and baking powder. The basic composition of Easter cakes includes only water, yeast, flour and some eggs (for better fermentation).

After four hours of fermentation, cakes are formed from the dough. Preliminary, sugar and natural ingredients are added to the mass to give taste, aroma and color: candied fruits, raisins, butter, powder, icing - the imagination is not limited. Actually, baking is carried out in two types of ovens: rotary and flow. Up to 200 products are prepared in each batch. After 60 minutes, incredibly fragrant Easter cakes are taken out of the ovens.

Laboratory

The first stage in the technologicalchain is to determine the characteristics of the supplied raw materials. Quality control at the Dedovsky Khleb plant is carried out by its own certified laboratory. Particular attention is paid to the evaluation of the quality of flour. Experts determine its moisture content, characteristics and amount of gluten. If the raw material does not meet the required performance, it will never be used in the factory.

To check the so-called falling number, a special device PChP-7 is used. This indicator allows you to control the quality of grain and finished flour. Also in the laboratory, finished bakery products are examined for compliance with technical specifications, sanitary and hygienic and other standards. Raw materials that have passed control are unloaded to the bulk storage warehouse.

Marketing

Immediately after the founding of the enterprise in 1970, the products were sold exclusively on the territory of the Istra district of the Moscow region. However, over the past decades, marketing policy has changed dramatically. Today, bread from grandfather's bakers can be purchased in most stores near Moscow and the capital.
